Miso Glazed Salmon
1 cup sweet white miso
3 Tablespoons brown sugar
¼ cup sake
¼ cup mirin or medium dry sherry
4 salmon filets
Mix first four ingredients in saucepan. Simmer on low for 2 minutes. Stir occasionally. Cool completely.
Spread 1/3 miso in bottom of glass baking dish. Add salmon skin side down. Spread remaining marinade on top of salmon.
Cover with plastic wrap and refrigerate for at least 12 hours
or up to 24 hours. Scrape marinade from fish and pat dry with paper
towels.
Grill salmon until done.
